Jim Hightower was twice elected and served 8 years as Commissioner of the Texas Department of Agriculture where he established international marketing initiatives, agricultural processing projects and farmer cooperatives which especially benefitted Black and Hispanic farmers. He also served as the president of the Texas consumer Association, co-founded the Agribusiness Accountability Project and edited the nationally-respected Texas Observer. His books include Eat Your Heart Out: Food Profiteering in America and Hard Tomatoes, Hard Times a report on America's land grant colleges.
